Coconut Lamb Curry

I wanted to try something simple, yet very tasty with the 500 gms lamb in my refrigerator. And this, is the yummy outcome ! It took me just 30 mins to make it..and this was an absolute delight !

You’ll Need :

500 gms of lamb with bone (  I always prefer with bone coz it keeps the flavor intact)

1 tsp of chilli powder

1/2 tsp + of pepper

A pinch of turmeric

1/2 tsp Cumin powder

1 tsp Coriander powder

1 large onion, julienne’d (sliced thin and long)

Sea salt to taste ( Coarse salt not the fine one )

2 tsps of freshly ground Ginger Garlic paste ( 1:2 ratio of ginger and garlic)

Fresh coconut, about a half of it, cut thin and long

3 red chillies

1/2 cup Coconut milk (I used the other half of the coconut for this )

2 tsps of oil

Water to add

Curry leaves and Parsley or coriander chopped

1 tsp of your favorite masala. I added my own masala to this. you can try garam masala or tandoori chicken masala.

Preparation :

1. In a pressure cooker, add lamb , 1 tsp of chilli powder, 1/2 tsp (+) of pepper, a pinch of turmeric, 1/2 tsp Cumin powder, 1 tsp Coriander powder, half of the onion slices , Sea salt , 2 tsps of freshly ground Ginger Garlic paste , 1 tsp oil and may be 200 ml of water. Add little water to retain the taste of lamb. Lamb should cook in its own juices.

2. Mix them thoroughly and pressure cook for about 12 whistles.

3. In a non stick pan, add the other tsp of oil, and add the coconut slices with a pinch of turmeric. Fry them for a while.

4. Add the remaining sliced onions, red chillies and saute till the onions turn translucent. You may consider adding a pinch of salt to speed up this process.

5. Add the curry leaves.

6. Add all of the cooked lamb in to this and fry for 10 mins

7. Add coconut milk, saute till the whole curry comes together and lastly, add the masala powder and coriander.
