Brinjal and Soya Chunks in Coconut,Milk..

For all those friends of mine who are wondering if I ever post anything with a south indian twist, here it is !

I just finished cooking this curry and I must say, it did taste wonderful ! So decided to share it here 🙂

And yeah, all those bachelor friends of mine, you can give this a try too..may be on sunday’s when you’ve time and you have a girl whom you wanna impress coming over ! 😉

You’ll need :

Refined oil / Groundnut oil (preferred) – 5 tsp

1 onion chopped

Curry leaves

Mustard seeds – 1 tsp

Jeera / Cumin – 1 tsp

Fresh coconut; a quarter of it; soaked in water for 5 mins and made into a fine paste with water.

Milk – 250 ml.

Garam Masala – 1.5 tsp

Chilli Powder – i put 2 tsp !

Coriander Powder – 1 tsp

Green chillies chopped finely – 1 tsp

Soya Chunks (throw them in boiling hot water for a minute, strain the water, pour cold water and squeeze the excess water out of them before adding them into your dish)

Brinjal – 250 gms. (Chop them thin and straight, and half them. Fry them in a little oil to avoid them becoming soggy.)

Ginger Garlic paste – 2 tsp

AamChur (Dry mango powder) – 1/2 tsp


Prep :

1. Take a bottomed pan, add oil, mustard seeds, cumin, curry leaves, green chillies, onions, ginger garlic paste. Let them cook for a while till the onions change color.

2. Add chilli powder, coriander powder, turmeric, garam masala, a little bit of am chur (dry mango powder). Add a little water at this stage if you find the heat overwhelming.

3. Once the spices and the onions have belnded well, add the coconut paste and milk.

4. Let it simmer for a while. Then add soya chunks, after 5 mins, add your fried brinjal / aubergines.

5. Check the seasonings before you garnish and serve !!!

Goes well with parathas, roti, basic veg biryani/pulao.
