Malai Kofta

I’m sure most of you would agree that it is OK to cheat while on a diet plan 😉 And that is when Malai Kofta comes in for me !

This creamy..delicate..vibrant dish certainly is one among my favorites !

To make this , you’ll need –

100gms grated paneer

50gms very finely chopped sultanas or apricots

100gms green peas

100gms carrots

100gms cauliflower

250gms of potatoes, boiled and mashed evenly

3 tsp of bread crumbs / corn flour

1 tsp garam masala

Chilli powder (yellow chilli powder preferred)

1.5 tsp of lemon juice

1 inch ginger , 6-9 cloves of garlic

3 green chillies (u can add more if you want)

3 Onions chopped

1 medium tomato

Cream or malai

Butter

Soaked Almonds – 7-9

Preparation :

I know that’s a long list of ingredients ! But let me try and make the preparation sound straight and easy !

1. Boil peas, cauliflower, carrots. Mash them. Add chilli powder, salt, garam masala, lemon juice, grated paneer, sultanas and mashed potatoes to the mashed vegetables. You can use about 1 tsp of corn flour to further bind the mixuture if needed. Make kofta balls about 1 inch in radius. Roll them in bread crumbs; keep aside for deep frying.

2. In a pan, saute in oil, chopped onions, tomato, ginger, garlic, cloves, green chilli’s, almonds for about 10 mins. Blend this to make a nice gravy. Add a generous amount of cream/malai and this is how it looks..

3.  Pour the gravy over fried kofta’s..you can sprinkle grated cheese..and pour over cream (that’s the heart of a malai kofta !) and coriander !
