Broccoli Cheddar Soup

It’s winter time and all I want to have after a long day at office is a hot and yummy soup with some crispy bread ! This is one of my favorites and every time I make it, it just fills me up ! Here goes the recipe –

Ingredients :

1/4 cup onion chopped

1/4 cup butter or olive oil (your choice)

1/4 cup all purpose flour/ corn flour(anything is fine)



3/4 cup chicken stock or vegetable stock (you get cubes of stock in the market and all you need to do is dissolve them in warm water !)

1 cup milk

1 cup Broccoli

1/2 cup minutely chopped carrot (if you like)

1/2 cup shredded cheddar cheese

Preparation :

1. Turn on the heat and melt the butter in a saucepan. Saute onion in the saucepan till it turns tender and translucent.

2. Add broccoli and carrot and saute them till they turn soft.

3. Stir in the salt(keep a check on we are using vegetable stock. can even add later), pepper and flour in the vegetable/chicken stock untill smooth.

4. Add the broth and milk at once, cook and stir until the mixture boils and thickens into a soupy consistency.

5. Check the seasonings and remove from heat and then stir in the cheese until melted.
