Breakfast Casserole

Have you ever tried out a casserole for breakfast?? It’s probably the easiest thing to do ! Especially when your fridge runs out of ingredients and you need to make a break fast !! All it needs is eggs, cheddar cheese, bread and milk !! And the nicest thing about this recipe is that you can add anything to it’s base !!

Ingredients :

7-10 eggs

2.5 cups of cheddar cheese, grated

6-8 slices of bread, cubed.

2-3 cups of milk

Salt

Pepper

Add-on’s :

1/2 cup mushrooms

1/4 cup spring onions or green onions

1/2 cup corn (baked/cooked/frozen)

1/2 cup broccoli (cooked or raw)

1 cup of sausage (any sausage in your fridge would do..even bits of chicken !)

1/2 cup caramelised onions

Herbs (coriander/thyme/basil/mint/oregano…your choice..)

An oven casserole dish..

Preparation :

1. Preheat oven to 170-180 degree Celsius. In a bowl, beat the eggs, mix in the cheese and bread till there are moist. Dont over mix it as the mixture may turn soggy. Add your choice of add-on’s. Add pepper and salt.

2. Butter or oil the casserole dish you want to put into the oven.

3. Bake in the oven at 170 degrees or 180 degress Celsius for about 40 min, till the top turns a golden brown and the insides are cooked well. Let it cool for a few minutes before serving !!!

You can have it for break fast or brunch !
