Methi Chaman

Roti’s and Paratha’s are something which I take to office everyday for lunch ! But making a new recipe which goes with them, every day has been challenging !!

This is one recipe which most of my friend’s love and it goes great with buttered paratha’s !!

Ingredients :

1 pack salted butter

1 bunch of coriander, chopped

1 tsp coriander powder

2 1/2 tsp cream

1/2 tsp cumin seeds

Whole garam masala

5 cloves of garlic crushed

Ginger Garlic paste

7-8 green chillies

1/2- 3/4 tsp Dry ginger powder

5 bunches of methi, chopped

Mustard oil

1 onion chopped

5 bunches of palak, chopped

1.5 cup of soft paneer (cottage cheese)

Salt

1/2 tsp sugar

A pinch of turmeric

A pinch of garam masala powder.

Preparation:

1. In  a pan, add a few table spoons of oil and add the chopped palak and chopped methi leaves. Let them reduce in a low heat. Add little water if required. And blend them in to a coarse paste after cooling down

2. Take a pan, add garama masala, cumin seeds, chopped onion.

3. Cook till onions are golden brown colour then add , garlic crushed ,turmuric, butter, ginger garlic pasted, green chillies, saute it. You can even add red chilli powder if the heat isn’t sufficient for your taste.

4. Now add salt, the paste of methi and palak , sugar, coriander powder, ginger powder and cook till oil oozes out ,cook at a very low heat.

5. Now, add water as needed, add cream and then add paneer sliced(or crumbled) and cook for 3-4 min. Then add coriander leaves for the flavor.

You can serve it with Roti’s, Pulka’s or Paratha’s ! I love it with vegetable kulcha ! 🙂
