Vegetable Chopsuey

If I have just 20min left and friends are pulling over at my place, the first thing I would think about, is making a chopsuey !  It’s healthy too and is loaded with lots of nutrition from vegetables.

Here goes the recipe !

You’ll need:

2 large carrots, peeled
2 medium onions
1 inch piece root ginger, peeled
100 g button mushrooms
175 g beansprouts
100 g broccoli
3 cups (600 ml) boiling water
150 ml vegetable stock
3 tbsp tomato ketchup
1/2 – 1 tbsp soy sauce, to taste
5 tsp of Corn flour
salt to taste
6 spring onions, trimmed and sliced
1tsp Vinegar
3 red chillies,chopped (optional)
Oil for frying

How to Make?

1. Get the vegetables ready. You can even add bamboo shoots, if they are available. It is all about playing around with vegetables you usually like ! So, chop the broccoli, grate the ginger, halve and slice the onions, quarter the mushrooms..and pour the boiling water over bean sprouts and drain thoroughly.

2. In about 2tsp of oil, on a hot wok, add ginger, carrots and onion…followed by mushrooms and then bean sprouts after 2 min.

3. Mix the corn flour with vegetable stock, vinegar, soya sauce, salt and ketchup. If you need more heat and spice, chop a few red chillies thinly and add them to this mixture according to your taste.

4. Stir this mixture into the vegetables and bring to a boil. Make sure your stirring continuously!

5. Deep fry noodles in a bottomed wok , till they are brown and keep them aside.

6.  When the mixture has thickened, check for seasoning and add ketchup, salt or soy according. Can also add chilli-tomato ketchup for more tang and spice.

7. Pour the mixture over the fried noodles and serve ! 🙂
