Mango Split

Summer is here and roads outside are soon gonna be full of vendors selling sweet ripe mangoes 🙂 Mangoes are one among my list of favorite fruits and I enjoy them in all ways – just cut, topped with ice cream and chocolate sauce, with rum and coconut..what ever !!

You’ll need,

  • 2 tablespoons shredded coconut
  • 1 tablespoon butter
  • 1/2 tsp light brown sugar
  • 1 small tablespoon lime juice
  • 1 tablespoon dark rum
  • 1 ripe mango
  • 2 scoops vanilla ice cream
  • 2 scoops mango sorbet
  • 2 brown cookies or fan wafers or chocolate bytes
  • Few chocolate chips (optional)

Now, the preparation is quite simple !

  1. Dry roast the coconut in a dry small frying pan until dark golden color. Shift it aside
  2. In a saucepan, melt the butter, then combine with the sugar, lime juice and rum, let it come to a boil and bubble for 2 minutes. Take it off the heat.
  3. Finely chop and peel and dice the mangoes  into about small cubes.
  4. Place a scoop each of vanilla ice cream and mango sorbet or chocolate sauce onto two sundae glasses or bowls.
  5. Tumble the mango pieces, then sprinkle the toasted coconut on top.
  6. Spoon the still warm syrup over the fruit; dont put too much of it..just spoon a little on each bowl.
  7. you stick a cookie or fan wafer or a chocolate stick into each sundae.
