Butter Chicken

 

I was watching tv and suddenly this kingfisher goodtimes ad came up where the waiter sings a recipe-song !! It goes on like this.. oolalala ooleyoo ooolalalah ooleyoo..butter chicken dum biryani…oolalalah ooleyooo….!! 😉

Butter chicken and biryani go really well together !! May be after this post i ll post dum biryani too ! (it takes a long time for me to type the recipe of dum biryani !!)

Butter chicken is best cooked with those little chicks or fowls..their meat is tender and it just melts in your mouth when you taste it ! if you cant get the chicks, the normal chicken would do..

Ingredients :

100gms butter

6 cashews

1 small bunch coriander

1tsp coriander powder

1/2tsp cumin

1/2 tsp kasoori methi or crushed fenugreek leaves

1tsp ginger garlic paste

100ml fresh cream

1 medium onion chopped

3 green chillies

250gms of chopped tomato

500gms of chicken

salt

sugar

red chilli powder

oil

tomato ketchup (optional)

To prepare,

Cut chicken into thin slices and apply ginger garlic paste ,salt ,chilli powder and shallow fry in oil, keep it aside. I used olive oil. Dont worry about the little pieces of chicken stuck at the bottom ! They infact add flavor when you start proceeding further with this process.

To the same pan with leftover oil add ,cumin,onion,ginger garlic paste. Add chopped onions ,tomatoes, cashew and other spices.Let it simmer with a little water till everything reduces and acquires the required consistency. Cook it slowly and really nice because when we blend it, we want it to be very fine.

So, blend this mixture and add it to an other pan with hot melted butter and cook on a medium flame.

Now,add the chicken to the gravy and let it cook for few more minutes till it tenderizes. You can add food color to it but i dont prefer it for health reasons.

Add a little bit of ketchup for that restaurentish-flavor.

Serve this with a sprinkle of garam masala and fresh cream !!

It goes great with roti’s and biryani !
