My version of KFC Coleslaw !

I have always loved eating crispy chicken with coleslaw..! And sometimes, my snack box is just some toasted bread with coleslaw !!

And here is a version of mine..i kinda tried to get the taste of KFC coleslaw..and managed a little !! Try out !!

8 cups finely chopped cabbage

1/4 cup shredded carrot (1 medium carrot)

2 tablespoons minced/chopped onion

1/3 to 1/4 cup granulated sugar

1/2 teaspoon salt

Half of a 1/4 teaspoon pepper

1/4 cup milk

1/2 cup mayonnaise (use lite if u want to)

1/4 cup buttermilk

1 1/2 tablespoons white vinegar

2 1/2 tablespoons lemon juice

1. Cabbage and carrots are to be grated/chopped up into very fine, even pieces

2. Combine the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar, and lemon juice in a large bowl and beat it until nice and smooth. The ingredients should blend and dissolve in the mix.

3. Now, add the cabbage, carrots, and onion, and mix well.

4. Cover and refrigerate for at least 60min before serving…the idea is just to make it cold n tasty. u can even do with 10 min of refrigeration or none too.

This makes coleslaw for about 8-10 people !

As you can see, this is a very easy recipe to make..all you need is a small walk to the near by supermarket, pick up few things..and then dig in ! you can avoid refrigeration(if u r veryyy hungry !) and also, vinegar if you wish to..coz lemon would be sufficient at times and if you dont like onion, you can very well skip it.

As this hardly takes a few minutes to make..meanwhile, you can toast some bread..and enjoy a mini-meal !!

If you have extra patience, try frying some frozen chicken or frozen french fries…if not, a pack of Lays chips would do ! 🙂 This, in fact goes well with all those Mr.Busy-Bachelor’s who love cooking and experimenting.
