Pita Bread, Hummus and Blanched Veggies !!!

Its time to go a little middle eastern !! Pita bread is very versatile…you can use it for dips..for making healthy sandwiches etc etc !!

And hummus, is a protein rich chickpea dip and this goes absolutely great with pita bread and veggies !

Making pita bread is simple.

All you need is–

1 cup of wheat flour (i prefer wheat to all purpose flour as it contains fiber)

1/2 cup luke warm water

1/2 tsp yeast

1/2 tsp or less salt (depends on ur taste buds !)

Mix the yeast with luke warm water and let it rest for 10 – 15 min till its frothy.If the yeast goes flat, then dont use it and change the packet.

In a bowl, mix wheat flour and salt. Add the yeast mix, and some water if required, make it into a slightly thick dough and leave it aside for about 2-3 hrs. The dough should double in size after it rises.

Roll small balls of dough into flat circles using a rolling pin and in a hot pan, fry them up. No need to add any oil.

Once they cool down, you can cut them in half and fill their pockets with a filling of your liking or your kid’s liking !

This is how they are gonna look —

I usually go with a mint chutney, cottage cheese, tomatoes and a lettuce filling. Also chicken filling is one of my favorites !!

For the Hummus,

1.5 cups chickpea (white chana)

5-6 cloves of garlic

1/4 cup lemon juice

3-4 tsp sesame seeds roasted

Olive oil

Salt

pepper

red or green paprika

Soak the chickpeas overnight and pressure cook them with salt. Keep aside some of this liquid you get after boiling aside. Now add boiled chickpea, a little of the liquid, all other ingredients into a food processor. Add olive oil in between to get the right consistency for the dip.

Garnish with olive oil and crushed chick peas n herbs if you like !!
