Spicy Chicken Curry My style ;)

Most of my friends, including myself are “chicken” people..!! we always prefer chicken to lamb !!

And this recipe, is one of my all time favorites and my specialty too 😉

So here you go !

All you need is–

1kg Chicken

2-3 tsp Chilli powder

1-2 tsp salt or depending on your taste

2 tsp ginger garlic paste

1/4 tsp turmeric

Curry leaves

2 Green chillies

Bay leaf (1-2)

oil

coriander (1 small bunch)

For the chicken masala mix :

Roast and grind,

5 cloves

1 inch of cinnamon

4 cardamom pods

1/2 cup khus khus (poppy seeds)

2 tsp Coriander seeds

1 tsp Shahjeera (normal cumin would go too)

Some nutmeg

5-6 cashews

4 – 5 tsps boiled rice (yes ! u got it right;) dis is mystyle !! )

Blend all these well in a food processor along with the boiled rice and some water. Get it into a creamy thick consistency !

Now, Chop 3-4 onions finely along with 2 tomatoes.

Starting off, Marinate the chicken with chilli powder, salt, turmeric and ginger garlic paste. Keep that aside.

Take a pressure cooker, add about 4-5 tsps of olive oil or vegetable oil, add bay leaf, curry leaves, some ginger garlic, cumin, onions and fry till they turn pink. Now drop in chopped tomatoes.

Drop in the marinated chicken pieces, add the spice mix, just a sprinkle of water, seal the top of the cooker and wait till 3-4 whistles !! By adding boiled rice to the spice mix, it gives the required consistency for the dish !! and it makes it taste yummm !! Thats my secret ingredient 😉

Its done !!! now add the chopped coriander leaves , green chillies (u can fry them if u wish to !) generously over the chicken and serve it hot with rice or Indian breads, roti etc !!!

you can try making pasta with variations using this chicken too !! 😉
